Steps
1. Peel and cube the potato, then boil it in vegetable broth until tender.
2. Drain the potatoes and reserve the broth.
3. Mash the potatoes until smooth and mix with the reserved broth.
4. In a small saucepan, heat the mixture and stir in the agar-agar, cooking for about 2-3 minutes until dissolved.
5. Add olive oil, salt, black pepper, and thyme, stirring well.
6. Pour the mixture into a mold and refrigerate for at least 2 hours to set.
7. Once set, carefully unmold the jelly and slice to serve.
