Spicy Minty Rice Bowl

Steps

1. Rinse the rice under cold water until the water runs clear. Soak for 20 minutes and then drain. 2. Heat oil in a pan over medium heat. Add chopped onions and sauté until translucent. 3. Add minced garlic, grated ginger, and chopped green chilli. Sauté for 2 minutes until fragrant. 4. Stir in the soaked and drained rice, mixing well with the onion mixture. 5. Pour in 2 cups of water, add salt, and bring to a boil. 6. Once boiling, reduce heat to low, cover the pan, and let it simmer for 15-18 minutes until rice is cooked. 7. In the last few minutes of cooking, add chopped mint, garam masala, and grated jaggery, stirring gently to combine. 8. Remove from heat and let it sit for 5 minutes before fluffing with a fork. Serve warm.
