Steps
1. Rinse the rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
2. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
3. Add the chopped onions and sauté until they turn golden brown.
4. Stir in the diced potatoes and cook for about 5 minutes, stirring occasionally.
5. Add the chopped tomatoes, ketchup, turmeric, red chili powder, and salt. Cook until the tomatoes soften.
6. Add the soaked rice and 1 cup of water. Stir gently, then cover and bring to a boil.
7. Once it boils, reduce the heat to low and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
8. Fluff the rice with a fork and garnish with fresh coriander before serving.
