Steps
1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
2. In a pan, heat the oil over medium heat and add cumin seeds. Allow them to sizzle for a few seconds.
3. Add the chopped onion and sauté until golden brown.
4. Stir in the diced potato and cook for about 5 minutes, stirring occasionally.
5. Add the chopped tomato, turmeric powder, and salt. Cook until tomatoes soften.
6. Add the diced cucumber and garam masala, mixing well. Cover and simmer for 10 minutes, adding a little water if necessary.
7. Meanwhile, in a separate pot, bring 1 cup of water to a boil, add the soaked rice, and cook covered until the water is absorbed and the rice is fluffy (about 15 minutes).
8. Serve the vegetable curry hot over a bed of rice, garnished with fresh coriander.
