Steps
1. Rinse the quinoa under cold water and drain.
2. In a saucepan, combine quinoa and water, and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
3. In another pan, heat olive oil over medium heat. Add mixed vegetables and sauté until tender, about 5 minutes.
4. Add the cooked quinoa to the pan with vegetables, then pour in brewed coffee. Stir in turmeric, cumin, and salt. Cook for another 2-3 minutes until heated through.
5. Serve hot, garnished with chopped cilantro and a dollop of yogurt if desired.
