Steps
1. Begin by seasoning the chicken breast with salt and pepper.
2. In a skillet over medium heat, cook the chicken breast for 5-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside.
3. In the same skillet, lower the heat and add peanut butter, soy sauce, lime juice, honey, and red curry paste. Stir until well combined.
4. Gradually pour in the coconut milk, stirring constantly until the sauce is smooth and creamy.
5. Return the chicken to the skillet, coating it with the sauce. Simmer for an additional 2-3 minutes.
