Steps
1. Heat vegetable oil in a pan over medium heat.
2. Add minced garlic and sauté until fragrant, about 30 seconds.
3. Increase the heat and add the chicken pieces, cooking until browned and cooked through, about 5-7 minutes.
4. Stir in the sliced mushrooms and cook for another 3 minutes until soft.
5. Add the spinach, soy sauce, fish sauce, and sesame oil, stirring until the spinach wilts, about 2 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh cilantro if desired.
