Steps

1. Heat a small skillet over medium-high heat and add coconut oil. 2. Add cubed pork and cook for 3-4 minutes until just cooked through. 3. Add coriander, cumin, lemongrass, garlic, and red onion, and cook for an additional 2 minutes. 4. Add red chili, lime juice, and fish sauce and stir to combine. 5. Remove from heat and stir in chopped mint and cilantro. 6. Serve in lettuce wraps with additional lime wedges.
