Thai Chicken and Mushroom Cheese Rice

A delicious Thai-inspired main dish featuring tender chicken and mushrooms cooked in soy sauce, served over cheesy rice.

Steps: 1. Heat some oil in a pan over medium heat. 2. Add the sliced chicken breast and cook until browned and cooked through. 3. Remove the chicken from the pan and set aside. 4. In the same pan, add the sliced mushrooms and cook until softened. 5. Return the chicken to the pan and add soy sauce. Stir well to coat the chicken and mushrooms. 6. In a separate pan, heat the cooked rice and stir in the shredded cheese until melted and well combined. 7. Season the cheesy rice with salt and pepper to taste. 8. To serve, place a generous portion of the cheesy rice on a plate and top with the chicken and mushroom mixture. 9. Garnish with fresh cilantro or green onions, if desired.
