Thai Steamed Mussel & Vegetable Wrap

This dish is a light, yet flavourful wrap filled with steamed mussels and stir-fried mix vegetables.

Steps

1. Heat the vegetable oil in a medium pot over medium-high heat. 2. Add garlic and stir-fry for 1 minute. 3. Add mussels, shrimps, bean sprouts and cabbage, stir-fry and cook until vegetables are softened. 4. Add the Thai basil and lemon juice and stir-fry for another 1-2 minutes. 5. Add soy sauce, brown sugar, and fish sauce, stir-fry and cook for 2-3 minutes. 6. Fill a large bowl with hot water and add in the rice paper sheets one at a time until softened. 7. Place softened rice paper sheet on a plate and fill the center with the stir-fried mix vegetables and mussels. 8. Wrap the sheet and enjoy.

Ingredients for 1 person: • 4-5 large mussels • 4-5 shrimps • 2 handfuls of bean sprouts • 1/2 cup of cabbage, diced • 2 cloves garlic, chopped • 2 tablespoons of fresh Thai Basil, chopped • 1 tablespoon of lemon juice • 1 tablespoon of vegetable oil • 1 tablespoon of Soy Sauce • 1/2 tablespoon of brown sugar • 1 tablespoon of fish sauce • 2 large sheets of rice paper
