Veggie and Halloumi Burger

A delicious veggie burger made with halloumi and a variety of vegetables. Perfect for an easy weeknight dinner.

Steps

1. Preheat the oven to 375°F (190°C). 2. Cut the halloumi, pepper, onion and garlic into small cubes. 3. Heat the olive oil in a medium skillet. 4. Add in the halloumi, pepper, onion and garlic and cook for 5-7 minutes until golden. 5. Once done, season with the thyme, paprika, garlic powder, and onion powder. 6. Transfer the ingredients onto a baking tray. 7. Bake for 15-20 minutes until golden brown. 8. While the veggie mix is baking, heat up the burger bun. 9. Assemble your burger by spreading the hummus over the bun, adding the lettuce, tomato, avocado and veggie mix. 10. Serve once everything is done.

Ingredients

2-3 tablespoons of olive oil, 1/2 teaspoon of rubbed thyme, 1/4 teaspoon of smoked paprika, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, 50g of halloumi, 1/3 bell pepper, 1/3 medium onion, 1/2 garlic clove, 1 toasted whole-wheat burger bun, 5-6 lettuce leaves, 1 tomato, 1/2 avocado and 1/4 cup of hummus.
