Steps

1. Peel and dice the potato, then boil in salted water until tender (about 15 minutes). 2. In a small bowl, mix rosemary, thyme, minced garlic, salt, and pepper. 3. Rub the herb mixture all over the lamb chop. 4. Heat olive oil in a skillet over medium-high heat. 5. Sear the lamb chop for 3-4 minutes on each side until desired doneness. 6. Drain the potatoes and mash with butter, milk, minced garlic, and salt until smooth and creamy. 7. Plate the lamb chop with a serving of garlic mashed potatoes and serve hot.
