Steps
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in a pan over medium heat, add minced garlic and sauté until fragrant.
3. Add spinach to the pan and cook until wilted, about 2 minutes. Remove from heat and mix in feta cheese.
4. Carefully slice the chicken breast horizontally to create a pocket without cutting all the way through.
5. Stuff the spinach and feta mixture into the chicken pocket.
6. Season the outside of the chicken with salt, pepper, and oregano.
7. Place the stuffed chicken breast in a baking dish and bake for 25-30 minutes until chicken is cooked through.
8. Let rest for 5 minutes before serving.
