1. Preheat oven to 400 degrees F. 2. Place chicken and potatoes on a baking sheet. Sprinkle with salt and pepper. 3. Roast in the oven for 12-15 minutes. 4. Place cooked rice in a bowl. Top with diced chicken, potatoes, and avocado. 5. Sprinkle with more salt and pepper, if desired. Enjoy!
