Banana Pumpkin Bran Muffin

A moist and healthy muffin combining ripe bananas, pumpkin puree, and oat bran, lightly spiced with pumpkin pie spice and studded with sweet raisins.

Steps

1. Preheat oven to 350°F (175°C). 2. In a blender or food processor, puree mashed banana and pumpkin puree until smooth. 3. Add egg white, about 1 tablespoon of beaten whole egg, and applesauce; puree until combined. 4. Add nonfat dry milk and pumpkin pie spice; pulse to blend. 5. In a separate bowl, combine whole-wheat flour, oat bran, baking soda, and raisins; mix well. 6. Add banana-pumpkin mixture to dry ingredients and stir until well combined. 7. Spray a muffin cup with olive oil cooking spray. 8. Spoon batter into muffin cup evenly. 9. Bake for about 30 minutes or until a toothpick inserted comes out clean. 10. Let muffin cool before serving.
