1. In a skillet, heat the oil over medium-high heat. 2. Add the beef chunks and cook until browned on all sides, about 5-7 minutes. 3. Push the beef to one side of the skillet and add the diced onions and green pepper. Sauté until they are tender, about 3-4 minutes. 4. Scramble the eggs in the empty space of the skillet until fully cooked, then mix with the veggies and beef. 5. Add the cooked rice to the skillet and stir well to combine all ingredients. 6. Season with salt and optional soy sauce to taste, cooking for another 2-3 minutes until everything is heated through. 7. Serve hot, garnished with green onions if desired.
