Steps
1. Season the chicken breast with salt and pepper.
2. Heat olive oil in a skillet over medium heat.
3. Add chicken breast and cook for 5-6 minutes on each side until golden and cooked through.
4. Remove chicken and set aside.
5. In the same skillet, add garlic and bell pepper, sauté for 2 minutes.
6. Add pineapple chunks, soy sauce, and honey; stir and cook for another 3 minutes until pineapple is slightly caramelized.
7. Return chicken to skillet, spoon the pineapple mixture over the top, and heat through for 1-2 minutes.
8. Garnish with fresh cilantro if desired and serve warm.
