Steps

1. In a small bowl, combine soy sauce, minced garlic, and honey to make the marinade. 2. Place beef cubes in the marinade and let sit for 10 minutes. 3. Preheat grill or grill pan over medium-high heat. 4. Thread beef cubes alternately with bell pepper pieces and zucchini slices onto the skewers. 5. Brush the assembled skewers lightly with olive oil and season with salt and pepper. 6. Grill the skewers for about 3-4 minutes per side, turning to cook evenly until beef is cooked to desired doneness. 7. Remove from grill and let rest for 2 minutes before serving.
