1. Cut the pork belly into 1-inch cubes. 2. In a pot, heat a small amount of oil and add the pork belly, browning it on all sides. 3. Add the ginger, scallion, and star anise, stirring for 1 minute. 4. Pour in the soy sauce, Shaoxing wine, and sugar, mixing well. 5. Add water until the pork is just covered, then bring to a boil. 6. Reduce to a simmer, cover, and cook for 30 minutes, stirring occasionally. 7. Remove the lid and continue to simmer for 10-15 minutes until the sauce thickens. Adjust salt to taste. 8. Serve hot with rice and enjoy!
