1. Cook the white rice according to package instructions and set aside. 2. Heat olive oil in a pan over medium heat. 3. Add the beef mince to the pan, breaking it apart with a spoon. 4. Season with smoked paprika, ground cumin, salt, and pepper. 5. Cook the beef mince until browned and cooked through, about 7-8 minutes. 6. While the beef cooks, prepare the vegetables: dice the bell pepper, cucumber, and tomato; grate the carrot. 7. In a large bowl, combine the cooked rice, rocket leaves, and prepared vegetables. 8.
