Steps

1. Preheat the oven to 200°C (390°F). 2. Heat olive oil in a pan over medium heat. Add sliced onions with a pinch of salt and cook slowly for about 15-20 minutes until soft and caramelized, stirring occasionally. 3. Roll out the puff pastry sheet on a baking tray lined with parchment paper. Score a 1-inch border around the edges, being careful not to cut all the way through. 4. Spread the caramelized onions evenly inside the border. 5. Crumble goat cheese over the onions and sprinkle with fresh thyme leaves. 6. Beat the egg and brush the pastry edges for a golden finish. 7. Bake in the oven for 20-25 minutes until the pastry is golden and puffed. 8. Remove from oven and let cool slightly before serving.
