Steps
1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
2. In a bowl, mix together the cottage cheese, chickpea flour, cornstarch, baking powder, garlic powder, Italian seasoning, salt, and pepper until smooth.
3. Fold in the shredded mozzarella cheese and pizza sauce until well combined.
4. Spoon the batter into the prepared muffin tins, filling each cup about 3/4 full.
5. Bake for 20-25 minutes or until the tops are golden and a toothpick inserted comes out clean.
6. Allow to cool slightly before removing from the tin. Enjoy warm!
