Steps
1. Prepare all filling ingredients: shred the cooked chicken, julienne the celery and carrot, thinly slice the chili, and chop the peanuts.
2. In a small bowl, combine peanut butter, soy sauce, honey, lime juice, grated ginger, and minced garlic. Add warm water gradually until the sauce reaches a smooth, dipping consistency.
3. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft but still slightly firm.
4. Lay the softened wrapper on a clean flat surface. Place a small handful of chicken, celery, carrot, chili, and a sprinkle of peanuts in the center.
5. Fold the sides of the wrapper over the filling, then roll tightly from the bottom up, enclosing the filling.
6. Repeat with the second wrapper and remaining ingredients.
7. Serve the summer rolls with the spicy peanut satay sauce on the side for dipping.
