Steps

1. Bring a large pot of salted water to a boil. 2. Add the spaghetti and cook according to package instructions until al dente. 3. While the pasta cooks, in a large bowl, mix the grated Pecorino Romano cheese and freshly ground black pepper. 4. Reserve 1 cup of pasta water, then drain the pasta. 5. Quickly add the hot pasta to the bowl with the cheese and pepper mixture. 6. Toss vigorously, adding reserved pasta water a little at a time until a creamy sauce forms. 7. Adjust with more cheese or pepper to taste. 8. Serve immediately with additional cheese on top if desired.
