1. In a bowl, mix the flour, salt, and sugar. 2. Add the cold vegan butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. 3. Stir in the cold water and lemon juice until the dough comes together. 4. Knead gently on a floured surface for about 1 minute until smooth. 5. Roll the dough into a rectangle, then fold it into thirds like a letter. 6. Chill in the refrigerator for 30 minutes. 7. Roll out again into a rectangle, fold, and chill for another 30 minutes. 8. Preheat the oven to 400°F (200°C). 9. Roll out the dough one last time, then cut into triangles. 10. Roll each triangle from the base to the tip to form a croissant shape. 11. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
