1. In a skillet, heat the olive oil over medium heat. 2. Add the chopped bacon and cook until crispy, about 3-4 minutes. 3. Remove the bacon from the skillet and set aside, leaving the drippings in the pan. 4. Add the onion and bell pepper to the skillet and sauté until softened, about 3 minutes. 5. Stir in the diced garlic potatoes, paprika, salt, and pepper, cooking until heated through and slightly crispy, about 5-7 minutes. 6. If using, create a small well in the hash and crack an egg into it. Cover the skillet and cook until the egg is done to your liking. 7. Stir the bacon back into the hash, mix gently, and serve hot.
