Steps

1. In a bowl, whisk the egg, olive oil, and warm water until combined. 2. Add the coconut flour, baking powder, and salt to the wet ingredients. 3. Mix until a dough forms; let it rest for 5 minutes to thicken. 4. Divide the dough into two equal portions and roll each into a ball. 5. Place one ball between two sheets of parchment paper and roll out into a thin circle. 6. Heat a non-stick skillet over medium heat. 7. Cook each tortilla for about 1-2 minutes on each side until lightly golden and cooked through. 8. Repeat with the second tortilla. 9. Serve warm with your favorite fillings.
