Grilled Mediterranean Octopus

Steps

1. Rinse octopus under cold water and pat dry. 2. Bring a pot of salted water to a boil and simmer the octopus for 45 minutes until tender. 3. Remove octopus and let cool slightly, then cut into bite-sized pieces. 4. In a bowl, mix olive oil, minced garlic, lemon juice, smoked paprika, salt, and pepper. 5. Toss octopus pieces in the marinade and let rest for 10 minutes. 6. Heat a grill pan over medium-high heat and grill octopus pieces for 2-3 minutes per side until slightly charred. 7. Transfer to a plate, sprinkle with chopped parsley, and garnish with a lemon wedge. 8. Serve warm as a main dish.
