Steps
1. Preheat grill or grill pan to medium-high heat.
2. Toss the zucchini, red bell pepper, asparagus, cherry tomatoes, and red onion with olive oil, salt, and pepper.
3. Grill the vegetables for 3-4 minutes on each side or until tender and slightly charred.
4. In a small bowl, whisk together tahini, lemon juice, maple syrup (or honey), minced garlic, and water until smooth. Adjust water for desired dressing consistency and season with salt.
5. Arrange grilled vegetables on a plate and drizzle generously with tahini dressing.
6. Serve warm or at room temperature.
