Steps
1. Heat olive oil or butter in a skillet over medium heat.
2. Add sliced sausages and cook until browned and cooked through, about 5 minutes.
3. Add diced chicken to the skillet just to warm through.
4. In a bowl, beat the eggs with salt and pepper.
5. Pour eggs into the skillet with the sausage and chicken; scramble until fully cooked.
6. Lay the tortilla flat on a plate.
7. Spoon the egg, sausage, and chicken mixture onto the center of the tortilla.
8. Sprinkle shredded cheddar cheese over the mixture.
9. Fold the sides of the tortilla over the filling and roll up tightly.
10. Optional: Place the rolled tortilla back into the skillet and cook for 1-2 minutes per side to crisp the tortilla and melt the cheese.
11. Serve warm with salsa or hot sauce if desired.
