Steps
1. Preheat your oven to 350°F (175°C) and spread the mixed nuts on a baking sheet.
2. Roast the nuts in the oven for about 8-10 minutes, or until they are golden and aromatic.
3. Allow the nuts to cool slightly, then transfer them to a food processor.
4. Add honey (or maple syrup), coconut oil, salt, and vanilla extract to the food processor.
5. Blend on high speed until the mixture is smooth and creamy, scraping down the sides as needed.
6. Taste and adjust sweetness if necessary, blending again if you add more ingredients.
7. Transfer the nut butter to a small jar or container and store in the refrigerator for up to two weeks.
