Hearty Lentil and Kale Soup with Citrus Ginger Twist

A nourishing lentil soup enhanced with fresh kale, vibrant orange pepper, and a zing of ginger, complemented by creamy avocado and fresh cilantro for a refreshing finish.

Steps

1. Rinse the lentils under cold water. 2. Heat olive oil in a pot over medium heat. Add onion, garlic, ginger, carrot, orange pepper, and celery. Sauté for 5 minutes until softened. 3. Add the lentils, chopped tomato, and water or broth. Bring to a boil. 4. Reduce heat and simmer for 20 minutes until lentils are tender. 5. Add chopped kale and cook for another 5 minutes. 6. Season with salt and pepper to taste. 7. Serve hot, topped with diced avocado and fresh cilantro leaves.
