1. Heat olive oil in a small pan over medium heat. 2. Add minced garlic and grated carrot; sauté for 2-3 minutes until softened. 3. Add chickpeas and chopped spinach; cook until spinach wilts, about 2 minutes. 4. Stir in cooked rice, mix well, season with salt, pepper, and soy sauce if using; cook for another 2 minutes. 5. In a separate small pan, fry the egg sunny side up or to your liking, seasoning with a pinch of salt and pepper. 6. Transfer the rice and vegetable mixture to a bowl and top with the fried egg. 7. Sprinkle chili flakes if desired and serve immediately.
