Steps
1. Heat oil in a pan and add mustard seeds. Once they start spluttering, add onions and sauté until golden brown.
2. Add tomatoes and green chilies, and cook until the tomatoes turn soft.
3. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
4. Add the boiled and cubed potatoes, and cook for 5 minutes, stirring occasionally.
5. Add the cooked rice and gently mix everything together. Cook for another 2-3 minutes.
6. Garnish with fresh coriander leaves and serve hot.
