Steps
1. Rinse the quinoa under cold water and drain.
2. In a small pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
3. While the quinoa cooks, heat olive oil in a skillet over medium heat. Add diced bell pepper and sauté for 5 minutes until softened.
4. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
5. In a bowl, mix cooked quinoa with sautéed vegetables and season with lemon juice, salt, and pepper.
6. Serve warm, garnished with fresh parsley.
