Steps
1. Preheat oven to 400°F (200°C).
2. Prick eggplant with a fork and roast on a baking sheet for 30 minutes until soft.
3. Let eggplant cool, then peel and mash the flesh.
4. In a blender, combine chickpeas, tahini, lemon juice, garlic, olive oil, and salt; blend until smooth for hummus.
5. Mix mashed eggplant with tahini, lemon juice, garlic, olive oil, and salt to make baba ganoush.
6. Warm pita bread in the oven for 5 minutes; brush lightly with olive oil.
7. Arrange hummus, baba ganoush, olives, and pita on a platter and serve.
