Steps
1. Preheat your oven to 180°C (350°F) and grease a small ramekin with butter.
2. In a bowl, mix the grated coconut, sugar, and a pinch of salt.
3. Add the egg and vanilla extract to the coconut mixture and stir until combined.
4. Sift in the flour and baking powder, mixing gently until just combined.
5. Pour the batter into the prepared ramekin and smooth the top.
6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
7. Allow to cool slightly before removing from the ramekin. Serve warm or at room temperature.
