1. Heat olive oil in a medium pot over medium heat. 2. Add chopped onion and garlic; sauté until translucent. 3. Add diced potatoes and smoked paprika; stir to coat. 4. Pour in vegetable broth, bring to a boil, then reduce heat to a simmer. 5. Cover and cook for 10 minutes, stirring occasionally. 6. Add chopped tomato and spinach; stir and cook uncovered for another 5 minutes until potatoes are tender and spinach is wilted. 7. Season with salt and pepper to taste. 8. Serve warm.
