Steps
1. Rinse the quinoa under cold water and then cook it in a small pot with 100ml of water. Bring to a boil, then reduce to a simmer and cover for about 15 minutes until water is absorbed.
2. While the quinoa cooks, heat olive oil in a pan over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
3. Add the minced garlic and cook for another minute.
4. Add the ground chicken to the pan, stirring until it is browned and cooked through, about 5-7 minutes.
5. Stir in the cooked quinoa, spinach, cumin, salt, and pepper. Cook until the spinach is wilted, about 2-3 minutes.
6. If desired, sprinkle grated Parmesan cheese on top before serving. Enjoy your meal!
