Quinoa Bowl with Sautéed Mushrooms

A nutritious and hearty quinoa bowl featuring earthy sautéed mushrooms, fresh greens, and a tangy lemon dressing. Perfect for a wholesome lunch or light dinner.

Steps

1. Rinse quinoa under cold water. 2. In a small pot, bring water to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. 3. While quinoa cooks, heat olive oil in a pan over medium heat. 4. Add minced garlic and sauté for 1 minute until fragrant. 5. Add sliced mushrooms, cook for 5-7 minutes until tender and browned. 6. Stir in baby spinach and cook until wilted, about 1-2 minutes. 7. Fluff cooked quinoa with a fork and transfer to a bowl. 8. Top quinoa with sautéed mushrooms and spinach. 9. Drizzle lemon juice over the bowl and season with salt and pepper. 10. Garnish with chopped parsley if desired and serve warm.
