Roasted Lamb with Chestnut Stuffing

Steps

1. Preheat oven to 375°F (190°C). 2. In a food processor, blend chestnuts, onion, garlic, herbs, salt, and pepper. 3. Cut a pocket into the lamb chop and stuff with the chestnut mixture. 4. Heat olive oil in a pan and sear the lamb chop on both sides. 5. Transfer the lamb to a baking dish and roast in the oven for 15-20 minutes. 6. Rest the lamb before serving.
