Steps
1. Heat olive oil in a small skillet over medium heat.
2. Add fresh spinach and sauté for about 2-3 minutes until wilted.
3. Season with salt, pepper, and garlic powder, stirring well.
4. In another pot, bring water to a gentle simmer. Crack the egg into a small bowl and gently slide it into the simmering water.
5. Poach the egg for about 3-4 minutes until the white is set but the yolk remains runny.
6. If using, toast the whole grain bread.
7. Assemble the bowl by placing the sautéed spinach on the bottom, topping it with the poached egg, and serving with toasted bread on the side.
