Spiced Beet and Carrot Lettuce Wraps

A vibrant and healthy dish combining roasted beets and carrots with aromatic turmeric and black pepper, wrapped in fresh lettuce leaves and served with a spicy buttered bread on the side.

Steps

1. Preheat oven to 400°F (200°C). 2. Toss diced beet and sliced carrot with turmeric, black pepper, and chilli powder. 3. Roast the vegetables on a baking sheet for 20 minutes until tender. 4. While vegetables roast, melt butter in a pan over medium heat. 5. Add chopped red and green chillies to the butter and sauté for 2 minutes. 6. Toast the bread slices in the chilli butter until golden on both sides. 7. In a bowl, mix roasted beets, carrots, chopped spinach, and parsley. 8. Place the mixture onto the lettuce leaves and wrap them. 9. Serve the lettuce wraps alongside the spicy buttered bread.
