Steps
1. Rinse the basmati rice under cold water until the water runs clear.
2. In a pot, heat a splash of oil over medium heat and sauté the onion until translucent.
3. Add the garlic and cook for another minute.
4. Stir in the cumin, turmeric, and paprika, cooking for another 30 seconds.
5. Add the rinsed rice and stir to coat it with the spices.
6. Pour in the vegetable broth, and season with salt and pepper.
7. Bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until rice is tender and liquid is absorbed.
8. Once cooked, fluff the rice with a fork and mix in the chickpeas and black beans.
9. Serve warm, garnished with fresh cilantro.
