Spicy Palak Aloo Sabji

1. Heat oil in a pan over medium heat. 2. Add cumin seeds and let them splutter. 3. Add the chopped onions and sauté until golden brown. 4. Stir in the green chili and diced potato, cooking for about 5 minutes. 5. Add turmeric powder, red chili powder, and salt, stirring well. 6. Cover and cook for about 10 minutes, or until potatoes are tender. 7. Add chopped palak and stir well, cooking for an additional 5 minutes. 8. Sprinkle garam masala and mix gently. 9. Garnish with fresh coriander and serve hot.
