Spicy Vegetable and Egg Curry

This hearty Spicy Vegetable and Egg Curry combines the earthy flavors of yam, potato, and carrot with the tanginess of tomatoes and the heat of chillies, all brought together with aromatic masala powders. Perfectly paired with fluffy rice for a fulfilling lunch.

Steps

1. Heat oil in a pan over medium heat and add cumin seeds. Let them splutter. 2. Add the diced yam, potato, and carrot. Sauté for 5-7 minutes until they start to soften. 3. Add the chopped tomato and green chilli. Cook until the tomatoes break down and mix well. 4. Sprinkle turmeric powder, garam masala, and salt. Stir to combine all the spices and vegetables. 5. Add a splash of water, cover, and simmer for 10 minutes until the vegetables are tender. 6. Make a small well in the center and crack the egg into it. Cover and cook for another 3-4 minutes until the egg is cooked to your liking. 7. Garnish with fresh cilantro and serve hot with rice.
