Sticky Sweet Baked Chicken Thigh with Sweet Potato Mash, Roast Tomatoes, and Sautéed Broccolini

Steps

1. Preheat oven to 200°C (400°F). 2. In a small bowl, mix honey, soy sauce, garlic powder, salt, and pepper. 3. Place chicken thigh in a baking dish and brush evenly with the honey-soy glaze. 4. Arrange cherry tomatoes around the chicken and drizzle with a little olive oil and salt. 5. Bake for 35-40 minutes or until chicken is cooked through and glaze is sticky. 6. Meanwhile, peel and chop sweet potato; boil in salted water until tender (about 15 minutes). 7. Drain sweet potato and mash with butter, salt, and pepper. 8. Heat olive oil in a pan over medium heat, add minced garlic and sauté for 1 minute. 9. Add broccolini, sauté for 5-7 minutes until tender but still bright green. 10. Plate the sweet potato mash, top with the baked sticky chicken, and serve with roast tomatoes and sautéed broccolini.
