Steps
Preheat the oven to 375°F (190°C).
In a bowl, mix pumpkin puree, ricotta cheese, minced garlic, nutmeg, salt, and pepper until well combined.
Cut a pocket into the chicken breast and stuff it with the pumpkin mixture.
Heat olive oil in a skillet over medium heat and sear the stuffed chicken breast for 3-4 minutes on each side until golden brown.
Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
Serve the stuffed chicken on a plate, drizzled with any remaining pumpkin puree and garnished with fresh parsley.
