Steps
1. Mix kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper in a small bowl.
2. Rub the spice mix evenly over the brisket slice, pressing it into the meat.
3. Heat olive oil in a heavy-bottomed pan over medium-high heat.
4. Sear the brisket for 3-4 minutes on each side until browned.
5. Remove brisket and set aside. In the same pan, add sliced onion and garlic; sauté until softened.
6. Add beef broth and Worcestershire sauce to the pan; stir to deglaze all browned bits.
7. Return brisket to the pan, add thyme sprig, and bring to a gentle simmer.
8. Cover the pan with a tight-fitting lid and reduce heat to low.
9. Cook brisket gently for 3 hours, turning once halfway, until it is fork-tender and juicy.
10. Remove brisket and let rest for 10 minutes before slicing thinly against the grain.
11. Serve with pan juices and sautéed onions for maximum flavor.
