Steps
1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
2. In a pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
3. Add spinach to the pan and cook until wilted, about 2-3 minutes.
4. In a bowl, beat the egg with Parmesan cheese, salt, and pepper.
5. Reduce heat to low, add the cooked pasta to the pan with spinach, then remove the pan from heat.
6. Quickly pour the egg mixture over the pasta and stir vigorously to create a creamy sauce without scrambling the egg.
7. Season with additional salt, pepper, and chili flakes if using. Serve immediately.
